Thai Coconut Rice Porridge (Khao Tom)

- jasmine rice0.5 cup
- water3 cup
- coconut milk1 cup
- salt0.5 tsp
- white pepper0.25 tsp
- shallots2
- vegetable oil2 tbsp
- fresh ginger1 inch
- green onions2
Instructions

Rinse the jasmine rice and add to a pot with water and coconut milk. Bring to a boil.

Reduce heat to low and simmer, stirring occasionally, until rice is very soft and porridge-like.

Season with salt and white pepper.

Fry the sliced shallots in oil until crispy and golden. Drain on paper towels.
