Ingredients
- red onions2

- berbere spice2 tbsp
- tomato paste2 tbsp
- garlic4 cloves
- fresh ginger1 tbsp
- red lentils1 cup
- water2.5 cup
- salt1 tsp
- lemon0.5
- fresh cilantro2 tbsp
Instructions
Dice the onions finely. Cook in a dry pot over medium heat, stirring often, until deeply caramelized and reduced by half.
Add the oil, berbere spice, and tomato paste. Stir constantly for 2 minutes until the spices are fragrant and the paste darkens.
Add the minced garlic and grated ginger. Cook for 1 minute.
Add the rinsed red lentils and water. Bring to a boil, then reduce to a gentle simmer.
Simmer uncovered, stirring occasionally, until the lentils have broken down completely and the stew is thick and rich.
Season with salt and a squeeze of lemon. Serve hot over injera or with crusty bread, garnished with fresh cilantro.
