Ingredients

  • sweet potato glass noodles8 oz
  • sesame oil1 tbsp
  • spinach4 cup
  • salt1 pinch
  • carrots2
  • red bell pepper1
  • shiitake mushrooms6
  • onion0.5
  • vegetable oil2 tbsp
  • soy sauce3 tbsp
  • sugar1 tbsp
  • sesame seeds1 tbsp

Instructions

Cook the sweet potato noodles according to package directions. Drain, rinse with cold water, and toss with sesame oil.

Blanch the spinach, squeeze out excess water, and season with a pinch of salt and sesame oil.

Julienne the carrots and red bell pepper. Slice the shiitake mushrooms and onion.

Stir-fry each vegetable separately in a hot skillet with a little oil until just tender. Set each aside.

In a large bowl, combine the noodles, all the vegetables, soy sauce, sugar, and sesame oil. Toss gently until everything is mixed.

Plate the japchae and garnish with sesame seeds. Serve warm or at room temperature.
