- thin rice noodles4 oz
- carrots2
- cucumber1
- red bell pepper1
- butter lettuce4
- fresh mint0.5 cup
- fresh cilantro0.5 cup
- rice paper wrappers12
- creamy peanut butter0.25 cup
- soy sauce2 tbsp
- lime juice1 tbsp
- maple syrup1 tbsp
- sriracha1 tsp
Instructions
Cook the rice noodles according to package directions. Drain, rinse with cold water, and set aside.
Julienne the carrots, cucumber, and red bell pepper. Shred the lettuce and pick the mint and cilantro leaves.
Dip a rice paper wrapper in warm water until just pliable. Place on a work surface.
Layer lettuce, noodles, vegetables, and herbs on the wrapper. Fold in sides and roll tightly.
Make the peanut sauce: whisk together peanut butter, soy sauce, lime juice, maple syrup, and sriracha. Thin with water.
Serve spring rolls with peanut sauce for dipping.
