Ingredients

  • black beans(drained and rinsed)1 can
  • cumin1 tsp
  • corn1 cup
  • red onion(diced)1/4 cup
  • cilantro(chopped)2 tbsp
  • lime1
  • avocado(sliced)1
  • tortillas(small)8

Instructions

Heat the black beans in a skillet over medium heat with cumin and salt. Stir occasionally and let them warm through.

Make the corn salsa by combining corn, diced red onion, and cilantro in a bowl. Squeeze in half the lime juice and stir.

Warm the tortillas in a dry skillet or directly over a gas flame until pliable.

Slice the avocado.

Fill each tortilla with the seasoned black beans, top with corn salsa and avocado slices. Squeeze the remaining lime over the top and serve.
