- large flour tortillas4
- shredded Mexican cheese blend1 cup
- salsa0.5 cup
- sour cream0.25 cup

Drain and rinse the black beans. Mash half of them lightly with a fork.

Season the beans with cumin, salt, and a squeeze of lime.

Spread beans on half of each tortilla. Top with shredded cheese and fold in half.

Cook quesadillas in a dry skillet over medium heat until golden on both sides and cheese is melted.
